I found a new Electronic Speed Controller (ESC) by SimonK. I was reading about the Turnigy Plush 30A ESCs and found that most people flash them with SimonK's firmware.
His ESCs are fairly new according to the post date on hobbyking and seem like the best option.
On the multicopter subreddit I found a poster who has a very similar goal as me, 3d print a quadcopter based on MikeyB's design.
His parts list seems similar to mine and I'm going to research more on the parts he chose differently.
